Different in appearance, similar in process

Both beancurd sticks and tofu skin are derived from the thin film that forms on the surface of boiled soy milk. If you skim this film off directly and let it dry, you get tofu skin — large, folded sheets that are soft in texture and ready to eat after minimal preparation. If you instead allow the film to hang naturally and stretch into strips before drying, it turns into dried beancurd sticks, which gets its name because its shape resembles bamboo sticks. Dried beancurd sticks are thin, curly, and firmer in texture, requiring soaking and cooking before eating.

Similar nutrition, very different texture

Both of these soy products are rich in protein and low in fat, making them excellentplant-based protein sources favored by health-conscious and fitness-oriented individuals. Tofu skin is smooth and tender, great for cold dishes or as a wrapper for fillings.
